March Farms Chunky Matsu Applesauce

Ingredients
-  10-15 large Matsu apples
-  ½ cup water
-  4-6 tablespoons fresh lemon juice

Preparation
-  Put water and lemon juice into a crock pot (5-6 quarts).
-  Cut the top and bottom off of the apples.  Peel the skin off down the sides.  Cut wedges away from the core into 1-2 inch cubes.  As you cut, put apple chunks into the crock pot and coat with water/lemon juice.
-  Fill the crock pot as full as you can with apples, so you can barely get the lid on.  
-  Cook on high for about 45 minutes.  Stir.  
-  Reduce temperature to low and cook for an additional 1-2 hours until the apples are cooked through but not falling apart.  The time is dependent on how hot your crockpot cooks.
-  Yield 4-6 cups.  Serve hot or cold.
